This traditional Algerian meat dish is cooked underground

for nearly 14 hours

The dish is called ‘Merdouma’ which means 'buried' in Arabic

Restaurant owner Amer Halimi is proud of his specialty

He buries the meat with stones heated by charcoal

It is served with a special sauce

that makes it crunchy from the outside and juicy from the inside

(Amer Halimi, restaurant owner) “It’s a very old dish, they used to cook it on stones, then it started to develop. We also developed it. We made a well where we add lit charcoal until it goes off, then we put the meat inside for 13 or 14 hours."
