This is a super easy Recipe for Homemade Applesauce, great on it's own or as a side for Pork Roast, Potato Pancakes or Pfannkuchen.
2 lbs Opal Apples
1 Lime, juiced
1/3 cup Sugar (more or less to your liking)
Pinch of Salt
1 tsp Vanilla
Peel, core and dice Apples, Tip: (keep cut Apples in a bowl with cold Water and 1 tsp of Lime Juice, to prevent oxidation, until ready to use)
Combine Apples, Sugar, Salt, Vanilla and the rest of Lime Juice, mix well.
Pour Apple Mixture in med sized Pot, cover and bring to a hard boil.
Remove lid, reduce heat and simmer until Apples are soft and Liquid is reduced, stirring frequently.
Remove from heat and mash to your liking
Cool and serve.
